About the Company

Planet Lodges & Spa operates luxury safari lodges and hospitality services in Tanzania. The company is seeking a skilled and dedicated Assistant Chef to join its culinary team at its Serengeti and Tarangire properties.

This role is ideal for professionals who are passionate about hospitality and ready to live and work in remote wilderness environments for extended rotations.


Position: Assistant Chef

The Assistant Chef will support the Head Chef in managing kitchen operations, preparing high-quality meals, and ensuring that all food services meet the standards expected in a luxury safari camp or boutique lodge environment.


Key Areas of Responsibility

Food Preparation & Service

  • Assist in preparing and cooking meals according to established menus and recipes.
  • Ensure consistency in food quality, taste, and presentation.
  • Prepare breakfast, lunch, dinner, and snack services according to guest schedules.
  • Assist in preparing staff meals where required.
  • Coordinate food preparation during service periods.
  • Ensure dishes are served on time and meet presentation standards.

Kitchen Operations

  • Support the Head Chef in daily kitchen operations.
  • Assist in managing kitchen workflow during peak service times.
  • Supervise junior kitchen staff when required.
  • Assist with training kitchen assistants and commis chefs.
  • Promote teamwork and efficient coordination within the kitchen.

Food Safety & Hygiene

  • Maintain high standards of kitchen cleanliness and sanitation.
  • Ensure food storage, handling, and preparation comply with health and safety standards.
  • Monitor food temperatures and proper storage conditions.
  • Follow all camp hygiene and safety procedures.

Stock & Inventory Management

  • Assist with kitchen stock control and inventory checks.
  • Monitor ingredient usage to reduce waste.
  • Notify the Head Chef of low stock or supply needs.
  • Assist in receiving and inspecting food deliveries.

Guest Experience

  • Ensure meals meet guest expectations and dietary requirements.
  • Assist with special meal requests and dietary accommodations.
  • Support high-quality food presentation for guest dining experiences.

Equipment & Workspace Management

  • Ensure proper use and care of kitchen equipment.
  • Report equipment faults or maintenance issues.
  • Maintain organized and safe kitchen workspaces.

Required Qualifications

  • Candidates must be physically and mentally prepared to live and work in remote wilderness areas (Serengeti / Tarangire) for long rotations.
  • Minimum 2–4 years of experience in a similar role within a luxury safari camp or high-end boutique lodge.
  • Proven ability to manage kitchen stores and bin cards with minimal supervision.
  • Proficiency in international cuisines.
