About the Opportunity
Planet Lodges & Spa is seeking a skilled and creative Pastry Chef to join its culinary team at its luxury safari lodges in Serengeti and Tarangire.
The successful candidate will be responsible for preparing high-quality desserts and baked products while maintaining exceptional standards expected in a luxury safari camp or boutique lodge environment.
Position: Pastry Chef
The Pastry Chef will oversee dessert production, pastry preparation, and baking operations, ensuring all pastry products meet the organization’s quality, hygiene, and presentation standards.
Key Areas of Responsibility
Pastry & Dessert Preparation
- Prepare a wide range of desserts including cakes, pastries, breads, cookies, and specialty sweets.
- Ensure consistency in taste, quality, and presentation.
- Produce desserts for breakfast buffets, afternoon tea, and dinner services.
- Create decorative and visually appealing desserts.
Menu Development
- Design dessert menus aligned with the restaurant or lodge concept.
- Introduce seasonal desserts and innovative pastry creations.
- Adapt recipes to accommodate special dietary requirements such as gluten-free or low-sugar options.
- Collaborate with the Head Chef to integrate dessert offerings into the overall menu.
Quality Control
- Ensure all pastry products meet the organization’s quality standards.
- Monitor baking times, ingredient measurements, and production processes.
- Conduct taste checks to maintain consistent product quality.
Food Safety & Hygiene
- Maintain strict hygiene and sanitation standards in the pastry kitchen.
- Ensure proper storage of ingredients such as dairy, chocolate, and flour.
- Follow food safety guidelines and temperature control procedures.
- Maintain clean and organized workstations.
Inventory & Stock Management
- Monitor pastry ingredients and baking supplies.
- Conduct regular inventory checks.
- Ensure proper stock rotation and minimize ingredient waste.
- Coordinate with procurement teams for pastry supplies.
Team Supervision
- Supervise pastry assistants and junior kitchen staff.
- Provide training and guidance on pastry techniques.
- Ensure staff follow recipes, safety procedures, and quality standards.
- Promote teamwork and efficiency within the pastry section.
Guest Experience
- Ensure desserts meet guest expectations in taste and presentation.
- Prepare special desserts for events, celebrations, and special occasions.
- Support the culinary team in delivering memorable dining experiences.
Equipment & Workspace Management
- Ensure proper use and maintenance of baking equipment.
- Report faulty equipment or maintenance issues.
- Maintain organized pastry workstations and storage areas.
Required Qualifications
- Candidates must be physically and mentally prepared to live and work in remote wilderness areas (Serengeti / Tarangire).
- Minimum 3–5 years of experience in a similar role within a luxury safari camp or high-end boutique lodge.
- Experience producing desserts for large guest volumes is an added advantage.
- Food safety certification is preferred.
