About the Position

&Beyond is looking for a passionate and experienced Regional Chef Trainer to support and develop culinary standards across its lodges in East Africa.

The successful candidate will play a key role in improving food quality, menu development, kitchen standards, chef training, guest dining experiences, and culinary skills across the region.

Key Responsibilities

  • Revise complete 7-day menus according to the Food Styling Guide and approved &Beyond recipes.
  • Review and revise special dietary menus across all East African lodges.
  • Conduct training on creative bush banqueting and food presentation.
  • Train chefs on food styling and presentation standards.
  • Keep up to date with current food trends and culinary developments.
  • Create new menus and recipes to improve food service standards.
  • Train staff on special dietary requirements and appropriate recipe selection.
  • Develop and train teams on new guest-delight food ideas and concepts.
  • Train chefs and implement kitchen standards across all lodges.
  • Maintain effective communication with chefs, camp managers, HODs, lodge managers, and suppliers.
  • Promote discipline, teamwork, flexibility, and professional conduct.
  • Engage with guests, Food Fundis, and other chefs to exchange ideas and gather feedback.
  • Train chefs on menu costing, kitchen controls, and waste management.
  • Train chefs on presenting food to guests, including stories about local produce and flavours.
  • Develop staff skills and support career progression and promotion.
  • Rotate through lodges to improve food standards, quality, and presentation.
  • Promote and support local procurement.
  • Work closely with the procurement team to develop suppliers.
  • Support the Food & Beverage function, including coffee, tea, game-drive drinks, and personal bars.
  • Provide input into projects and budgets.
  • Maintain and update food styling guides.
  • Ensure alignment with &Beyond food strategies.
  • Liaise with consultants regarding dietary requirements.
  • Work with lodge teams to address guest feedback relating to Food & Beverage.
  • Work closely with the Regional Training Team.
  • Host annual Food Fundi Workshops for East Africa.
  • Encourage chef exchange programmes and skills development.
  • Support Academy training and skills development alignment.
  • Assist with managing and addressing food overruns where required.

Qualifications & Experience

  • Higher Diploma in Culinary Arts or a related field.
  • Experience in the hospitality/service industry.
  • At least 10+ years of relevant experience.
  • Strong passion for creating exceptional food and culinary experiences.
