1. Position: Bar Manager
Role Summary:
The Bar Manager is responsible for end-to-end management of all bar operations, ensuring exceptional guest experiences, high beverage quality, and strong revenue growth. This is a hands-on role for a leader with cocktail expertise and experience in high-volume, premium environments.
Key Responsibilities:

Operations: Oversee daily operations of all bar outlets; ensure international-standard cocktail delivery and service.

Cost Control: Manage bar inventory, minimize wastage/pilferage, and conduct monthly stock counts and reconciliations.

Leadership: Recruit, train, and supervise bartenders; foster a high-energy team culture and conduct performance reviews.

Compliance: Enforce alcohol licensing laws, health and safety regulations, and responsible alcohol service.

Events: Collaborate with marketing to drive sales through promotions, parties, and special beach events.
Qualifications & Experience:

Education: Diploma or certification in Hospitality Management, Food & Beverage, or Mixology.

Experience: Minimum of 7 years of experience in an international-standard beach restaurant, resort, or lifestyle hospitality venue.

Skills: Expert knowledge of spirits, wines, and international cocktails; strong financial discipline and organizational skills.
2. Position: Head Chef
Role Summary:
The Head Chef oversees kitchen operations, managing staff, and creating innovative menus while maintaining high food quality and safety standards. This role supports the Executive Chef in delivering high-quality dishes while optimizing kitchen costs and efficiency.
Key Responsibilities:

Menu Development: Design innovative, cost-effective menus and seasonal specials that align with current food trends.

Kitchen Management: Supervise daily workflow; ensure kitchen equipment is maintained and inventory levels are optimized.

Staff Leadership: Recruit, mentor, and train kitchen staff; enforce discipline, hygiene, and safety protocols.

Quality & Cost Control: Monitor food costs (target 28-32%), maintain portion sizes, and ensure waste reduction (target <5%).

Compliance: Ensure full compliance with food safety regulations (e.g., HACCP) and maintain top-tier kitchen cleanliness.
Qualifications & Experience:

Education: Culinary degree or relevant professional certification (preferred).

Experience: Proven experience as a Head Chef or Executive Chef in a high-volume restaurant environment.

Skills: Strong leadership and communication; in-depth knowledge of food safety and inventory management; ability to handle high-pressure environments.
