Education Outreach Tanzania (EDOTA) is a non-governmental organization registered in 2010 under Registration Number 00003478. The organization works in community development, health promotion, and inclusive community wellbeing.
As part of its programmes promoting better health and nutrition, EDOTA is seeking a skilled and experienced Community Cooking Instructor specializing in the preparation of healthy, nutritious, and special-diet meals.
Job Purpose
The Community Cooking Instructor will provide practical and theoretical cooking training to community-level service providers while promoting good nutrition, food safety, healthy dietary practices, and the preparation of meals suitable for people with different nutritional and health needs.
Duties and Responsibilities
1. Cooking Training
- Conduct practical and theoretical cooking training for community-level service providers.
- Provide health and nutrition education to strengthen healthy dietary practices.
- Train participants on appropriate cooking techniques, food safety, and nutritional considerations.
2. Preparation of Nutritious Meals
- Design, plan, and prepare high-quality, nutritious, and tasty meals.
- Prepare meals that meet specific health and dietary requirements, including:
- Low-salt foods.
- Foods suitable for people with diabetes.
- Allergen-free foods.
- Vegetarian meals.
- Balanced meals containing appropriate combinations of nutrients.
- Prepare a variety of traditional and modern foods while maintaining nutritional standards.
3. Menu Planning
- Develop menus that support health promotion and nutrition objectives.
- Consider cultural preferences, nutritional requirements, food quality, and taste when developing menus.
4. Nutritional Standards and Portion Control
- Ensure accurate measurement of food portions.
- Ensure ingredients meet the nutritional requirements specified for particular health and dietary needs.
- Apply appropriate food substitutions and alternatives where necessary.
5. Kitchen Management
- Supervise daily kitchen preparation activities.
- Ensure proper food preparation procedures are followed.
- Guide and supervise kitchen assistants to improve efficiency and quality.
- Ensure appropriate use and management of kitchen equipment and materials.
6. Food Hygiene and Safety
- Maintain a clean, safe, and well-organized kitchen environment.
- Ensure compliance with applicable national food safety requirements.
- Apply appropriate measures to prevent cross-contamination.
- Promote safe food handling and preparation practices.
Qualifications and Requirements
Education
Applicants should have:
- A Certificate or Diploma in Culinary Arts, Food Production, Nutrition and Dietetics, or a related field from a recognized technical institution.
Applicants without a formal certificate may be considered if they can provide a recommendation letter from an institution, organization, restaurant, or hotel with a strong profile in cooking, demonstrating their relevant experience and professional background.
Professional Experience
- At least 3 years of professional cooking experience.
- At least 1–2 years of specialized experience in preparing healthy, nutritious, or institutional meals.
Technical Knowledge
Applicants should have:
- Strong knowledge of the nutritional value of different foods.
- Knowledge of safe ingredient alternatives.
- Understanding of food safety and prevention of cross-contamination.
- Knowledge of preparing meals for people with specific health or dietary restrictions.
Cooking Skills
Candidates must be able to prepare a wide range of foods while taking nutritional value into consideration, including:
- Grilled meat.
- Fish.
- Leafy vegetables.
- Fruit juices.
- Different types of snacks.
- Traditional foods.
- Other basic types of meals and recipes.
Personal Skills
- Strong organizational skills.
- Good time-management skills.
- Ability to work efficiently in a kitchen environment.
- Caring and understanding approach when providing healthy food services.
- Ability to train and guide others in practical cooking skills.
