Johari Rotana is seeking a passionate and detail-oriented Cost Controller to join its Finance team. The successful candidate will support financial control processes, manage food and beverage costs, and work closely with operational teams to improve profitability and ensure effective cost management.
Job Summary
The Cost Controller will be responsible for monitoring operational costs, especially within the Food & Beverage department, by ensuring accurate costing, inventory control, purchasing compliance, and financial reporting.
The role requires strong analytical skills, understanding of hotel operations, and the ability to work collaboratively with different departments.
Key Responsibilities
Food & Beverage Cost Control
- Prepare recipe and menu costing in collaboration with the Executive Chef.
- Recommend appropriate selling prices based on cost analysis.
- Monitor food cost performance and identify areas for improvement.
- Prepare daily food cost flash reports.
- Verify daily outlet void control reports.
Receiving & Inventory Control
- Conduct test checks on goods received by the hotel.
- Ensure receiving procedures are properly followed.
- Perform random inventory checks across outlets.
- Reconcile opening stock, closing stock, store issues, and sales records.
- Monitor stock movement to reduce wastage and losses.
Banquet & Event Cost Management
- Attend major banquet events involving open bars.
- Prepare Profit and Loss (P&L) statements for major events.
- Prepare banquet revenue breakdown reports.
- Analyze event profitability and cost performance.
Compliance & Operational Controls
- Verify and control complimentary bar order forms.
- Monitor Club Rotana Food & Beverage costs.
- Verify guest room fruit basket controls.
- Ensure compliance with hotel financial procedures.
