Job Summary
&Beyond is seeking an experienced and passionate Executive Chef to lead culinary operations at &Beyond Grumeti River Lodge, Tanzania.
The successful candidate will be responsible for maintaining world-class food standards, managing kitchen operations, developing culinary talent, creating exceptional dining experiences, and ensuring guests receive outstanding cuisine that reflects the &Beyond brand identity.
Key Responsibilities
1. Food Quality & Culinary Standards
- Take overall responsibility for guest and staff food quality standards.
- Ensure consistent delivery of exceptional food experiences.
- Implement kitchen standards and regularly inspect staff kitchens and canteens.
- Elevate the lodge’s food offering through:
- Innovative dishes
- Enhanced guest experiences
- High presentation standards
- Ensure food presentation follows the &Beyond Styling Guide and lodge food identity.
- Ensure all guest meals are checked by the Executive Chef or Sous Chef before service.
2. Menu Development & Guest Experience
- Create seasonal menus based on:
- Guest preferences
- Available ingredients
- Lodge requirements
- Meet guests during arrival whenever possible.
- Build relationships with guests and encourage feedback.
- Understand and accommodate special dietary requirements for both guests and staff.
- Continuously improve culinary experiences at the lodge.
3. Staff Leadership & Training
- Develop and train chefs and employees to improve their skills.
- Mentor team members and support career growth opportunities.
- Motivate staff to consistently deliver high-quality results.
- Promote teamwork, learning, and continuous improvement.
- Act as a role model through professionalism and positive leadership.
4. Kitchen Operations & Administration
Manage departmental responsibilities including:
- Staff files
- Duty schedules
- Hygiene standards
- Kitchen procedures
- Operational documentation
Ensure effective daily kitchen management and compliance with company standards.
5. Stock Control & Equipment Management
- Maintain excellent stock control systems.
- Manage ordering processes and stock rotation.
- Monitor inventory levels to minimize wastage.
- Ensure proactive maintenance of kitchen equipment.
- Maintain strong relationships with suppliers.
6. Communication & Collaboration
Maintain effective communication with:
- Chefs
- Heads of Departments
- Lodge Manager
- Suppliers
- &Beyond Food Fundis
Encourage feedback, exchange ideas, and share culinary knowledge across teams.
Qualifications & Experience Required
Candidates should have:
- Formal culinary qualifications.
- Minimum 2 years’ management experience.
- Previous experience in a 5-star hospitality operation is highly preferred.
- Ability to work under pressure while maintaining excellent attention to detail.
- Strong guest-focused approach.
- Positive attitude and willingness to learn.
- Strong teamwork and leadership abilities.
Key Skills Required
