Duty Station:                   Elewana – Arusha Coffee Lodge

Arusha Coffee Lodge by Elewana is seeking a dynamic, organised, and passionate Junior Sous Chef to join our Kitchen team. This position is responsible for supporting kitchen leadership, supervising multiple kitchen sections, and ensuring exceptional food quality, operational efficiency, and adherence to Elewana luxury hospitality standards.

The successful candidate will support the Sous Chef in coordinating daily kitchen operations while maintaining consistency, food safety, cost control, and strong team leadership across all service periods. This role is ideal for a chef demonstrating strong leadership potential and readiness for future progression into senior kitchen management.

KEY RESPONSIBILITIES

●      Support supervision of daily kitchen operations across multiple sections.

●      Coordinate kitchen workflow to ensure smooth and efficient service delivery.

●      Ensure all food leaving the kitchen meets required quality, consistency, and presentation standards.

●      Oversee mise-en-place preparation and operational readiness across sections.

●      Support stock control, requisitioning, food cost management, and waste reduction initiatives.

●      Ensure proper stock rotation (FIFO), storage, and ingredient handling procedures.

●      Maintain high standards of kitchen hygiene, HACCP compliance, and food safety.

●      Support implementation of RTTZ and NEMC sustainability practices within kitchen operations.

●      Supervise, train, and mentor CDPs, Commis Chefs, trainees, and kitchen porters.

●      Assist in managing dietary requirements and special guest requests.

●      Support the Sous Chef during high occupancy periods, VIP visits, and special events.

●      Step in to lead kitchen service in the absence of the Sous Chef when required.

Ideal Candidate and Qualifications

●      Diploma or Certificate in Culinary Arts, Hospitality Management, or Professional Cookery.

●      Previous experience as Chef de Partie or Junior Sous Chef within a luxury lodge, hotel, or high-volume kitchen environment.

●      Strong understanding of kitchen operations, food safety, and quality control standards.

●      Experience supervising multiple kitchen sections is highly preferred.

●      Good understanding of food cost control, inventory management, and kitchen audits.

●      Ability to work flexible hours including weekends and public holidays.
